Joyful Reunion Pot

Ingredients:

300g King oyster mushroom, washed and sliced

50g Vegetarian sea snails, soaked for 6 hours

10g Sea bamboo fungus, soaked for 5 min and cut in section

10 Shiitake mushrooms, soaked

170g Broccoli, cut in pieces and steamed

120g Carrot, cut in strips and steamed

Organic oil, vary to taste

Sesame oil, sprinkle

Basil, vary to taste


Seasoning:

1 tbsp. Liquid Aminos (soy sauce)

3 tbsp. Black bean paste

2 slices Galangal

2 slices Ginger

1 piece Star anise

1 piece (2cm) Cinnamon


Preparation Method:

1) Heat a pot; pour in oil, sesame oil, ginger slices - fry to fragrance; add in vegetarian sea snails, stir-fry; add in water and simmer for 5-10 minutes.

2) Heat a pot over low heat; pour in oil and add galangal - fry to fragrance; add in star anise and cinnamon.

3) Pour in soy sauce and bean paste, fry lightly; pour in king oyster mushrooms and shiitake mushrooms, and stir-fry; pour enough water to cover them, boil with medium heat; turn to low heat for 25 minutes; switch off heat and simmer for 2-3 hours.

4) 3 hours later, use low heat to boil; add in sea bamboo fungus, broccoli and carrots - cook to a boil; add in veg. sea snails and basil, mix evenly and serve.

 

团圆欢喜锅

材料:

杏鲍菇300克(洗净切片)

素海螺50克(泡6小时)

海竹笙10克(泡5分钟;切段)

香菇10朵(泡过)

绿色野菜花170克(切块;蒸熟)

红萝卜120克(切条状;蒸熟)

有机食油(适量)

麻油(少许)

九层塔(适量)


调味料:

Liquid Amino 1汤匙

油膏3汤匙

南姜2片

八角1粒

桂皮1小段(2cm)


作法:

1)热锅,倒入少许油、麻油;将姜片爆香;再加入素海螺,翻炒片刻;加入少许的水再焖5至10分钟即可。

2)用小火热锅,倒入油;先爆香南姜,加入八角、桂皮。

3)倒入酱油、油膏,炒片刻,再倒入杏鲍菇、香菇,翻炒;倒入水,大约盖过面,用中火煮滚;再转小火煮大约25分钟,熄火,再焖2至3小时。

4)3小时后,用小火煮滚,加入海竹笙、绿色野菜花、红萝卜、滚后加入素海螺;九层塔拌均即可上桌。
