PORRIDGE (Cantonese Style)

Ingredients
Half cup (1/2) of brown rice (70 gm) – Wash clean and soak.
1 handful of dried straw mushroom – soak, clean and cut into cubes.
3 pieces of dried mushroom – wash, soak and cut into cubes.
50 gm – red carrot – cut into cubes
10 pieces of french beans - cut into cubes
1 tablespoon of fine ginger slices.
Corriander - cut into thin fine slices
1 tablespoon of organic oil
Sesame oil - suitable amount
4 and half (41/2) bowls of water

SEASONING
Sea salt
Light soy sauce
Pepper

Method

  1. Boil water and gradually add in brown rice, sea salt, oil, straw mushrooms, dried mushrooms.  Use a ladle to stir to prevent sticky rice at the bottom.  Cover pot and cook over small fire for one and half hours.
  2. Add in carrots, French beans and continue to boil for approximately 1 hour.
  3.  Add in seasoning and switch off  fire.
  4. Serve with garnishes – sesame oil, ginger slices and corriander.

广东粥

材料:
糙米 ,半杯(70克)(洗净、泡好)
干草菇,一把 (泡好、洗净、切丁)
香菇,三朵 (泡过、切丁)
红萝卜,50克(切丁)
四季豆,10条(切丁)
姜丝,一汤匙
芫荽,适量(切细)
有机食油,一汤匙
麻油,适量
水,四碗半

调味料:
海盐,少许
酱清,适量
胡椒粉,少许

作法:
1)先把水煮沸,徐徐加入糙米、海盐、油、草菇、香菇。用勺子搅拌以防糊底,盖上盖子,小火煮大约一个半小时。
2)加入红萝卜、四季豆。继续煮大约一个小时。
3)加入适量的调味,即可熄火。
4)在食用粥时,可淋上麻油、姜丝和芫荽。

 

 

BLACK GLUTINOUS PORRIDGE WITH COCONUT MILK

Ingredients
1 cup of black glutinous rice (about 140 gm)  -  wash and soak overnight.
100 gm of coconut sugar (‘Gula Melaka’)
4-5 pieces of pandan leaves
1 small bowl of coconut milk
6 bowls of water

Method

  1. Boil water.  Add black glutinous rice and pandan leaves gradually to the boiling water.  When this boils, turn to small fire and cook for about 3 hours.
  2. Cook glutinous rice till it turns thick and sticky.  Add in ‘Gula Melaka’ and cook for a little while.
  3. When ready, serve glutinous rice with coconut milk according to taste.

椰香黑糯米粥

材料:
黑糯米,一杯(140克)(洗净、泡过夜)
椰糖,100克
班兰叶,四或五片
椰浆,一小碗

水,六碗
作法:
1)水煮沸后,徐徐加入黑糯米和班兰叶。水滚后转小火煮大约三个小时。
2)黑糯米已煮成浓稠状,加入椰糖,稍煮片刻即可。
3)食用时,椰浆可随各人喜好的份量而加。
